Wash the cucumbers thoroughly and slice them thinly, about a quarter of a centimeter thick, keeping the skin on.

If using a mature cucumber with seeds, consider using an English cucumber to avoid seeds.

Add black pepper, sea salt, red onion, and dill to the mix.

In a bowl, combine mayonnaise, sour cream (or Greek yogurt), rice vinegar, and white granulated sugar. You can substitute honey for sugar if desired.

Add black pepper to taste and mix in the dill.

Whisk all the ingredients together to incorporate the flavors. If the mixture is too thick, thin it down with more rice vinegar or lemon juice.

Add the drained cucumber slices and thinly sliced red onion to the mixture.

Mix everything together well and chill in the fridge for about 10-15 minutes before serving.
