Battle of the Plum Cakes (NY Times Plum Torte vs Helen’s Plum Cake)

- ●1 cup unsalted butter, softened
- ●1 cup granulated sugar
- ●2 large eggs
- ●1 teaspoon vanilla extract
- ●1 teaspoon baking powder
- ●1/2 teaspoon salt
- ●1 1/2 cups all-purpose flour
- ●4-6 ripe plums, pitted and sliced
- ●1 teaspoon ground cinnamon
- ●1 tablespoon brown sugar
Instructions
- 1Preheat the oven to 350°F (175°C).
- 2Grease a 9-inch springform pan with butter or cooking spray.
- 3In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- 4Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- 5In a separate bowl, whisk together the flour, baking powder, and salt.
- 6Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- 7Pour the batter into the prepared springform pan and spread it evenly.
- 8Arrange the sliced plums on top of the batter, pressing them in slightly.
- 9Sprinkle the ground cinnamon and brown sugar over the plums.
- 10Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- 11Allow the torte to cool in the pan for 10 minutes before removing the sides of the springform pan.
- 12Serve warm or at room temperature.
