Today, pierogies have gained popularity worldwide, with various fillings and cooking methods reflecting local tastes.

Add 2 cups of flour and 1/2 teaspoon of salt to a mixing bowl.
Add 1 egg into the mixture and mix.
Add 4 tablespoons of soft butter and 1/2 cup of sour cream, then mix until clumpy.
Knead the dough with your hands until it forms a big clump, trying not to add more flour.
Put the dough back in the bowl, cover with saran wrap, and refrigerate for about 30 minutes.
Peel and dice 3 small potatoes into even cubes and rinse them.
Boil the rinsed potatoes in a pot covered with water on medium to high heat for about 10 minutes or until fork tender.
Strain the cooked potatoes and transfer them to another bowl.
Season the potatoes with salt and pepper to taste, add 1 tablespoon of butter and a splash of milk, then mash until smooth.
Add shredded sharp cheddar cheese (slightly more than 1 cup) to the mashed potatoes and mix until combined.
Cut the dough in half and roll out half to about 1/8 inch thick.
Use a 2-inch round cutter to cut circles into the dough.
Gather excess dough, combine with the other half, roll out, and repeat cutting circles until all dough is used.
Place a spoonful of filling onto each dough circle, fold over, and seal the edges with a fork.
Slice an onion into thin slices for the final step.
Boil water and drop in the perogis, making sure they don't touch each other, and cook for about 3-5 minutes or until they float.
In a skillet, add the sliced onion and 4 tablespoons of butter, sauté until brown and wilted.
Add the cooked perogis to the skillet with onions, tossing to brown them slightly.
Serve the perogis plain or with sour cream.
