  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. 1Wash the zucchinis and trim the ends.
  2. 2Using a spiralizer, create zucchini noodles (zoodles) from the zucchinis. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.
  3. 3In a large skillet, heat the olive oil over medium heat.
  4. 4Add the zoodles to the skillet and sauté for about 2-3 minutes until they are slightly tender but still firm.
  5. 5Season the zoodles with salt, black pepper, and garlic powder, stirring to combine.
  6. 6Add the halved cherry tomatoes and cook for an additional 1-2 minutes until the tomatoes are warmed through.
  7. 7Remove the skillet from heat and stir in the chopped basil.
  8. 8If desired, sprinkle with grated Parmesan cheese before serving.
  9. 9Serve immediately as a light main dish or side.
