In a pot, add almost 300 milliliters of water and heat until it's about to boil.
Once it's about to boil, add 100 grams of Parmesan cheese and stir until the cheese dissolves.
When the water is boiling, add 250 grams of flour and lower the heat, stirring until the dough pulls away from the edges.
Turn off the heat and transfer the dough to a flat surface.
Add 150 grams of mozzarella to the dough and knead carefully until everything is incorporated.
Use a churro maker to shape the dough into churros.
Preheat oil for frying and carefully place the churros into the hot oil, being careful not to overcrowd the pan.
Fry the churros until they are golden brown, rotating them as needed.
Remove the churros from the oil and place them on absorbent paper to drain excess oil.
