1

Start by putting 2 tablespoons of salt and pepper in the cavity of the chicken to add juiciness.

2

Rub the cavity with salt and pepper, ensuring it's well coated.

3

Add fresh thyme into the cavity of the chicken.

4

Stuff the cavity with large chunks of lemon and onion.

5

Add lots of garlic into the cavity, ensuring not to compact it too tightly.

6

Line the bottom of the roasting pan with thick slices of onion.

7

Place the chicken on top of the onions in the roasting pan.

8

Mix butter with a tablespoon of salt and a tablespoon of pepper, then generously rub it all over the chicken.

9

Drain and dry the potatoes that were kept in water to prevent oxidation.

10

Put the potatoes, carrots, beets, and onion chunks into a large Ziploc bag.

11

Drizzle olive oil into the bag and add more of the salt and pepper mixture, then shake to coat the vegetables.

12

Arrange the coated vegetables around the chicken in the roasting pan.

13

Stuff additional thyme and garlic around the vegetables in the pan.

14

Tie the legs of the chicken together with kitchen twine.

15

Bake the chicken in the oven at 400°F for 1.5 hours.

16

After baking, let the chicken rest for 20 minutes before serving.
