Preheat the oven to 425°F (220°C).
Peel and slice the apples to about a quarter inch thick, yielding about 9-10 cups of apples.
In a mixing bowl, combine the sliced apples with 1/4 cup light brown sugar, 1/4 cup granulated sugar, 1/4 cup all-purpose flour, 1 teaspoon ground cinnamon, and 1/2 teaspoon table salt.
Add 1 tablespoon lemon juice and 1/2 teaspoon vanilla extract to the apple mixture and toss until coated.
Roll out the first pie crust to about a 12-inch circle and place it in a 9-inch pie plate.
Brush the bottom of the pie crust with an egg wash made from 1 egg and 1 teaspoon water.
Pour the apple filling into the pie crust, avoiding excess juice if necessary.
Roll out the second pie crust and place it on top of the filling, sealing the edges and cutting slits for steam.
Bake the pie in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 30-40 minutes.
