Servings4
2 ripe bananas
1/4 cup butter
1/2 cup brown sugar
1 cup flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/4 cup raisins (or dry fruit)
flour for dusting raisins
1

Mash the ripe bananas using a masher or fork and set aside.

2

In a suitable bowl, add 1/4 cup butter and 1/2 cup brown sugar. Mix with a spoon until softened.

3

Add the mashed banana to the butter and sugar mixture and mix until well incorporated.

4

Add 1 teaspoon vanilla extract (if desired) and mix in.

5

In a separate bowl, combine 1 cup flour, 1/4 teaspoon salt, and 1/2 teaspoon baking soda. Mix until well combined.

6

Add the dry ingredients to the wet mixture and mix with a wooden spoon, then switch to using hands to form a firm but soft dough.

7

Dust 1/4 cup raisins with flour to prevent clumping and fold them into the dough until evenly distributed.

8

Grease two 10-inch pans and dust them with flour. Spoon tablespoon-sized pieces of cookie dough onto the pans, shaping them into slightly flattened round shapes.

9

Heat the pans on full flame for 20 to 30 seconds, then reduce to a very tiny flame for baking.

10

Bake the cookies for 15 to 30 minutes, checking for browning on the bottom before flipping them over.

11

After flipping, bake for an additional 10 minutes with the lids slightly open to allow steam to escape.

12

Once baked, transfer the cookies to a plate and allow them to cool for 30 minutes to an hour before serving.
