Add a little oil to the pot and turn on the heat.
Add 1 clove of crushed or chopped garlic to the pot.
Add 2 chopped onions to the pot.
Add 1/2 chopped bell pepper to the pot.
Add 4 chopped achochas to the pot.
Add 2 chopped carrots to the pot.
Sauté the vegetables for about 1.5 minutes until they are fragrant.
Add 2 liters of water to the pot.
Add 2 teaspoons of salt and a pinch of ground cumin to the pot.
If desired, add meat along with the vegetables, but in this case, no meat is used, so add beef broth concentrate instead.
Let the mixture simmer for 20 minutes over medium heat to concentrate the flavors.
After 20 minutes, blend the corn kernels with a little water until smooth.
Add the blended corn to the pot.
Add 1 liter of water to the pot and let it simmer for another 20 minutes over medium heat, stirring constantly and partially covered to prevent overflow.
After 20 minutes, add 4 chopped potatoes to the pot.
Cook for an additional 15 minutes until the potatoes are tender.
Plate the dish and garnish with parsley before serving.
