Cream together 1 stick of softened unsalted butter with brown sugar and granulated sugar for about 3 minutes on medium speed until light and fluffy.

Add creamy peanut butter to the mixture and mix until combined.

Add 1 egg and vanilla extract, then mix until well combined.

Add baking soda and salt to the mixture and mix together.

Gradually add all-purpose flour, mixing on low speed until the dough comes together.

Use a 2-inch cookie scoop to portion out the dough and space them a few inches apart on a baking sheet lined with parchment paper.

Bake in the preheated oven for around 10 minutes.

In the last 2 minutes of baking, remove the cookies from the oven and press unwrapped chocolate kisses into the center of each cookie.

Return the cookies to the oven for another 2 minutes, for a total baking time of about 12 minutes.

Allow the cookies to cool, preferably while still a little warm.
