Cut off the hard ends of the bitter gourd and slice it in half lengthwise.

Remove the seeds from the bitter gourd and cut it into thin square pieces.

Transfer the cut bitter gourd to a separate bowl.

Peel and cut 2 potatoes into thin square pieces, similar to the bitter gourd.

Cut 2 large onions in the same way, into square pieces.

Place all the chopped vegetables into one bowl together.

Heat a kadhai (wok) and add mustard oil until hot.

Add 2 dried red chilies and some panch phoron to the hot oil and stir for a few seconds.

Add 1 tablespoon of poppy seeds and then add the chopped bitter gourd, potatoes, and onions into the kadhai.

Stir well to combine the vegetables with the poppy seeds and spices.

Cover and cook for 2 minutes, then open the lid and stir again.

Add a few slit green chilies, 1/2 teaspoon turmeric, and 1/2 teaspoon salt, and mix well.

Cover and cook for another 2 minutes to ensure the vegetables are cooked through.

After 2 minutes, uncover and stir for another minute until the vegetables are nicely browned and cooked.
