Ingredients

  • 1 cup dates, pitted
  • 1/2 cup natural peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/2 cup roasted peanuts, chopped
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/2 cup dark chocolate chips (dairy-free if needed)
  • 1 tbsp coconut oil

Instructions

  1. 1Line an 8x8 inch baking dish with parchment paper.
  2. 2In a food processor, blend the pitted dates until they form a sticky paste.
  3. 3Add the peanut butter, cocoa powder, honey (or maple syrup), vanilla extract, and sea salt to the food processor. Blend until smooth and well combined.
  4. 4Spread the mixture evenly in the prepared baking dish, pressing it down firmly to create a base layer.
  5. 5Sprinkle the chopped roasted peanuts over the base layer, pressing them in slightly.
  6. 6In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  7. 7Pour the melted chocolate over the peanut layer, spreading it evenly with a spatula.
  8. 8Refrigerate the bars for at least 2 hours or until set.
  9. 9Once set, lift the bars out of the dish using the parchment paper and cut into squares or rectangles.
  10. 10Store the bars in an airtight container in the refrigerator.
