Callaloo and Ackee is a beloved dish in Jamaica, showcasing the island's rich agricultural heritage. Ackee, a fruit native to West Africa, is often paired with callaloo, a leafy green vegetable, creating a flavorful and nutritious meal. Traditionally served at breakfast or as a side dish, it reflects the fusion of African and Caribbean culinary influences. Today, this dish is enjoyed globally, celebrated for its unique flavors and vibrant colors.
ackee

Add some coconut oil and olive oil to a heated pan.
Add chopped onion and sauté for 2-3 minutes.
Add mixed bell peppers, garlic, and ginger, reserving the spring onions for later.
Mix to release flavors.
Add green seasoning and stir.
Add cherry tomatoes and stir.
Add thyme and scotch bonnet pepper and stir to combine.
Add rinsed callaloo to the pan and stir.
Add all-purpose seasoning, garlic granules, onion flakes, caribbean citrus blend, salt, and black pepper to taste.
Stir and cover, simmer for 8 minutes on medium-low heat.
Check for enough liquid and stir, cover, and simmer for another minute.
Add rinsed ackee, butter, spring onion, and thyme to the pan.
Gently stir to prevent ackee from breaking up.
Add roasted garlic and black pepper for flavor.
Taste and adjust seasoning with maggi, all-purpose seasoning, aromat, and black pepper.
