1/2 tsp black pepper
4 tbsp flour
3 tbsp oil
6 medium potatoes
3 tbsp olive oil
30 gr butter
1 onion
3 cloves garlic
2 kapia peppers
100 gr cherry tomatoes
1 cup tomato puree
1/2 cup water
1/2 tsp thyme
1/2 tsp basil
1/2 tsp rosemary
200 gr mozzarella
parsley

Season the chicken breast with 3/4 tsp salt and 1/2 tsp black pepper.

Coat the chicken breast with 4 tbsp flour.

Heat 3 tbsp oil in a pan on high heat.

Cook the chicken breast for 4 minutes on each side.

Chop 6 medium potatoes, 1 onion, 3 cloves of garlic, and 2 kapia peppers.

Add the chopped vegetables to the pan with the chicken.

Add 100 gr cherry tomatoes, 1 cup tomato puree, and 1/2 cup water to the pan.

Sprinkle in 1/2 tsp thyme, 1/2 tsp basil, and 1/2 tsp rosemary.

Add 30 gr butter to the pan and mix everything together.

Cover and cook for 10 minutes in the oven at 200C (400F).

Top with 200 gr mozzarella and return to the oven for a few minutes until melted.

Garnish with parsley before serving.
