Backyard BBQ'd Chicken Breasts

6 medium boneless, skinless chicken breasts, pounded lightly to an even thickness
1/2 cup orange juice
1/4 cup plus 2 tablespoons chicken stock
1/4 cup plus 1 tablespoon chipotle ketchup or barbecue sauce
1/4 cup orange marmalade
1 tablespoon tamarind paste or concentrate or tamarind chutney or 1 teaspoon Worcestershire sauce
1 tablespoon butter
1 tablespoon garlic-flavored oil or vegetable oil
1 teaspoon kosher salt or coarse sea salt

Prepare the sauce by stirring together the orange juice, chicken stock, chipotle ketchup, marmalade, tamarind paste, and butter in a small saucepan and bring to a boil over medium heat.

Reduce the heat to maintain a bare simmer and cook for about 5 minutes. (The sauce can be made a day or two ahead, if you prefer.)

Combine the oil and salt in a small bowl and rub it over the chicken breasts.

Prepare the smoker for barbecuing, bringing the temperature to 200°F to 225°F.

Transfer the chicken to the smoker, placing it directly on the grate.

Cook for a total of about 30 minutes until cooked through.

Brush the tops of the chicken breasts with about ½ cup of the sauce and continue cooking for about 10 minutes more until the sauce is a little tacky.

Serve the chicken immediately with more sauce on the side.
