3/4 tsp baking powder
1/4 tsp baking soda
pinch of salt
2 eggs
75g white sugar
125g brown sugar
80ml vegetable oil
1 tsp gin and tonic flavouring
120ml milk
1 tsp lemon juice
125g butter
250g icing sugar
2 tsp gin
juice from 1 lime wedge
food colouring

Mix 120ml milk with 1 tsp lemon juice and leave to reach room temperature.

Preheat oven to 180c and line a cupcake tray.

In a large bowl, mix together the flour, baking powder, baking soda and salt. Whisk until thoroughly mixed.

In a smaller bowl, whisk together the eggs, white sugar, brown sugar, oil and gin and tonic flavouring. Whisk until combined.

Pour half of the wet mixture, along with half of the milk and lemon mixture, into the dry mixture and whisk until combined.

Pour all remaining wet and milk mixture into the dry mixture and whisk until combined. This should only take a few seconds, try not to over whisk!

Separate into cupcake cases and bake in the middle of the oven for 16 minutes.

Remove from oven and transfer onto cooling rack. Allow to cool completely before decorating.

Place butter in a bowl and whisk until light and fluffy.

Add half of the icing sugar and whisk until combined.

Add remaining icing sugar and whisk until combined.

Separate 1/4 of the frosting into another bowl.

Add the gin and food colouring to the larger bowl and whisk until creamy.

Add lime juice and colouring to the smaller bowl and whisk until creamy.

Pipe the icing onto the cupcakes.
