Caramel Custard

Cultural Context

Caramel custard, known as Crème Caramel in France, has roots that trace back to ancient Roman times. This elegant dessert is a staple in French cuisine, often served in restaurants and at family gatherings. Its smooth texture and rich flavor make it a beloved treat across many cultures, with variations found in Latin America and Asia, where it's known simply as flan.

1

Prepare a skillet for making caramel over medium heat.

2

Add 1 cup of granulated sugar to the skillet and stir carefully to avoid burning.

3

Wait for the sugar to melt and turn amber in color, stirring gently.

4

Once the caramel is ready, carefully pour it into a baking pan.

5

In a blender, combine 1 can of evaporated milk, 1 can of condensed milk, 1 teaspoon of vanilla extract, 1 pinch of salt, and 4 eggs. Blend until smooth.

6

Set up a double boiler by placing the baking pan with caramel into a larger pan filled with water.

7

Add water to the larger pan and place it on medium heat until it starts to boil.

8

Once boiling, lower the heat to low and cover the setup with a lid.

9

Cook for approximately 45 minutes to 1 hour, checking every 15-20 minutes to ensure the water does not evaporate, adding more water if necessary.

10

After cooking, remove the flan from the water and let it rest at room temperature for a few hours until cool.

11

Once cooled, run a knife around the edges of the flan to loosen it before flipping it onto a plate.

12

Flip the flan onto a plate and serve.
