Reduce heat to low and add spices: coriander, cumin, black pepper, and bay leaves.
Cover and simmer for 30-40 minutes until meat is tender and vegetables are cooked through.
Taste and adjust seasoning with salt as needed.
Serve hot with rice or flatbread.
