Season the beef and chicken, then add the beef to a pressure cooker to tenderize it.
In a separate pan, sauté the chicken in about a teaspoon of oil until golden brown, then set aside.
Once the beef is tender, transfer it to a large pot along with the broth from the pressure cooker.
Add chopped plantains, cassava, corn, and yautía to the pot.
Add the chopped onion and bell pepper to the pot for flavor, then cover with water, about 3 cups more, to cover the ingredients.
Cover the pot and bring to a boil, then reduce heat and simmer until the vegetables are tender.
Add the sautéed chicken back to the pot along with the apple cider vinegar and adjust seasoning with salt and pepper as needed.
Blend some of the vegetables for a thicker consistency, then return to the pot and stir.
Let simmer for a few more minutes until the desired thickness is achieved.
