Add chopped plantains, cassava, corn, potatoes, and carrots to the pot.
Continue to simmer for another 30-40 minutes, until all vegetables are tender.
Stir in chopped cilantro and bay leaves during the last 5 minutes of cooking.
Adjust seasoning with salt and pepper as needed.
Serve hot, garnished with additional cilantro if desired.
