Put the chicken in a big pot along with any giblets that came with it.

Cover with water, bring to a boil, reduce to a simmer and cook until the chicken is fall-apart tender, 1-2 hours.

Cut up all your vegetables while the chicken is cooking, cutting the chunks larger than desired size as they will shrink during cooking.

Pull the chicken out and let it cool, then fish or strain out any remaining inedible solids.

Add the vegetables and a couple pinches of salt to the pot and simmer until they're soft, 30-60 minutes.

If using dry noodles or rice, add them about 30 minutes before the end of cooking.

Pick all the meat off of the chicken, roughly chop it, and return it to the soup before tasting for seasoning.
