Prep the chicken: Rinse the chicken and pat it dry with paper towel.

Fry Chicken: In a large pan add butter and oil then add bay leaves, cinnamon, cloves, black peppercorns, chicken, salt, cover and cook for 5 minutes. Remove the lid and add chicken stock and cook for another 15 to 20 minutes.

Remove chicken: Strain the soup through a fine-mesh sieve to remove the cooked chicken onto a plate. Let it cool slightly. Shred the meat from the bones and discard the bones.

Heat a kadai on medium flame, add oil and butter. As the butter melts, add ginger, garlic, green chillies, and coriander stems. Stir well, then add shredded chicken and stir for 1 minute. Now add all the vegetables like capsicum, French beans, spring onions, carrots, onions, and stir for 2 minutes. Now add chicken stock and give it a stir. Bring it to a boil over medium-high heat. Once boiling, add soy sauce, vinegar, salt, corn flour slurry, egg and simmer for 5 minutes.
