Mix warm water and active dry yeast with granulated sugar and let it bloom for 5 minutes.
Add bread flour and grapeseed oil to the yeast mixture and mix on medium for around 5 minutes.
Add 1 tablespoon of kosher salt and mix for another 5 minutes until well combined.
Transfer the dough to a warm, humid environment to rise until doubled in size.
Divide the dough into four pieces and shape each into a long oval on parchment paper.
Cover the shaped dough with a damp paper towel and let it proof again in a warm place.
Drizzle olive oil on top of the dough and sprinkle with Nigella and sesame seeds.
Create long dent lines in the dough with fingers.
Preheat the oven to 500°F (260°C).
Transfer the flatbreads on parchment paper to the oven and bake one at a time for around 5 minutes.
