1 cup lentils
1 cup walnuts
4 cups fine bulgur
2 tablespoons spice blend (cinnamon, allspice, clove, nutmeg)

1 cup cooked lentils

Put 2 cups of cremini mushrooms into a food processor along with 1 cup of lentils and 1 cup of walnuts.

Add the mixture to 4 cups of fine bulgur that has been prepared in boiling water.

Add 2 tablespoons of the spice blend (cinnamon, allspice, clove, nutmeg) and a generous helping of salt to the bulgur and vegetable mixture.

Sauté one grated onion until translucent.

Add 7 cups of a mix of cremini and oyster mushrooms to the sautéed onion.

Add 1 cup of roasted eggplant that has been roasted with a bit of spice blend.

Add 1 more cup of cooked lentils and another generous helping of salt and 2 more tablespoons of the spice blend.

Add 1/2 cup of toasted pine nuts.

Evenly press half of the bulgur mixture onto the bottom of a pan.

Spoon all of your filling on top in an even layer.

Cover the filling with the remaining bulgur and cut the kibbeh into diamonds before baking.
