Prepare the pre-dough by mixing 200 g of Weizenmehl (Typ 1050), 130 g of water, and 5 g of Trockenhefe. Let it rest for a while.
In a separate bowl, combine 800 g of Weizenmehl (Typ 550), 200 g of Roggenvollkornmehl, 1 1/2 TL of Trockenhefe, 420 g of water, 2 TL of liquid honey, and 18 g of salt. Mix well.
Add the prepared pre-dough to the mixture and knead until smooth.
Fold in 200 g of chopped almonds or walnuts and 200 g of cranberries or raisins.
Cover the dough with plastic wrap or a kitchen towel and let it rise for 11 hours.
After rising, shape the dough and place it in a proofing basket.
Preheat the oven and bake the bread in a 5 L cast iron pot for 50-55 minutes.
