Applesauce

10 lbs Macintosh apples
water
sugar (optional, start with 1/4 to 1/2 cup)
cinnamon (to taste)
lemon (optional)

Cut the apples in half and remove the seeds using your thumb and a knife.

Use an apple corer to remove the cores from the apples.

Place the cored apple halves into a pan.

Add a little bit of water at the bottom of the pan to prevent burning.

Heat the pan on medium with a lid on until the apples start cooking.

After about 20 minutes, reduce the heat to low and remove the lid to allow some liquid to evaporate.

Cook for an additional 10 minutes until the apples are mushy and thick.

Use a food mill to process the cooked apples, removing peelings and cores.

Add sugar to taste, starting with 1/4 to 1/2 cup, and stir it in.

Add cinnamon to taste, adjusting as needed.

Optionally, add a pinch of salt and a squirt of lemon juice for flavor enhancement.

Taste the applesauce and adjust flavors as desired.
