Lime juice provides a similar acidity.

Wash the guava and cut them in half.

Boil the guava in a pot of hot water for about 20 minutes until soft.

Mash the guava and strain through a sieve to extract the juice and pulp.

Pour the guava juice into a measuring cup.

Put the guava pulp back in a pot and add 1 cup of brown sugar and the juice of half a lime.

Add the water used for boiling the guava to the pot.

Cook the mixture until it thickens, stirring occasionally.

Pour the guava mixture into a glass dish and flatten the top.

Cover with saran wrap and refrigerate for up to 24 hours.

Run a knife around the edge of the dish to loosen the guava paste before serving.
