Preheat the oven to 350°F.
In a bowl, combine 2 cups of flour and 3/4 cup of sugar using a fork.
Add 2 teaspoons of baking powder and 1/2 teaspoon of salt to the flour mixture and mix well.
Melt 1 stick of butter and combine it with 1 cup of milk in a separate bowl.
Add 1 large egg (or 2 small eggs) and 1 teaspoon of vanilla extract to the milk mixture and mix together.
Combine the wet and dry ingredients using a spatula, leaving some lumps in the batter.
Spray a 9x9 inch baking pan with cooking spray and pour the batter into the pan.
In a bowl, mix together 1 cup of brown sugar, 1 teaspoon of cinnamon, and walnuts for the topping.
Sprinkle the topping mixture over the batter in the pan, swirling it slightly into the batter.
Bake in the preheated oven for 30 to 35 minutes, or until a toothpick comes out clean.
Let the coffee cake set for about 10-15 minutes before cutting.
