Chop 1 cup of strawberries into desired sizes.
In a mixing bowl, add 8 oz of softened cream cheese and 1 and 1/2 cups of Greek yogurt.
Beat the cream cheese and yogurt together until smooth and fluffy, scraping down the sides as needed.
Add 1 tablespoon of vanilla extract and about half of the powdered sweetener, then mix again.
Taste the mixture and adjust sweetness with more sweetener if desired.
Chop the roasted walnuts into finer pieces after they cool.
Line a small cookie sheet with parchment paper.
Spread the cream cheese and yogurt mixture evenly over the lined cookie sheet.
Refrigerate the spread while preparing the chocolate.
In a microwave-safe bowl, combine 2 to 4 tablespoons of no sugar added chocolate chips with 1 teaspoon of coconut oil.
Melt the chocolate in the microwave in 30-second increments, stirring in between, until smooth.
Remove the cream cheese mixture from the refrigerator and swirl in the melted chocolate using a fork or knife to create designs.
Sprinkle the chopped strawberries and walnuts over the top of the mixture.
Drizzle additional melted chocolate over the top if desired.
Press the toppings gently into the mixture.
Freeze the bark until set, then remove from the parchment paper.
Cut or break the bark into pieces to serve.
