Grünkohl mit Mettwurst

Cultural Context

Grünkohl mit Mettwurst is a traditional German dish, particularly popular in the northern regions during winter months. This hearty meal reflects the German love for kale, which is often harvested after the first frost, enhancing its sweetness. The dish is often enjoyed during festive gatherings and is associated with the tradition of 'Grünkohlfahrt', where groups go on a kale tour, enjoying the dish along the way. Today, it remains a beloved comfort food, with various regional adaptations.

1

Start by adding 100 g Wirsing into the Thermomix bowl and chop it.

2

Transfer the chopped Wirsing to a separate bowl.

3

Weigh 800 g of mealy potatoes, cut into 2 cm pieces, and add them to the Thermomix bowl.

4

Add 250 g of milk, 100 g of good butter, 1 heaping teaspoon of salt, 1 heaping teaspoon of mustard, 0.5 teaspoon of nutmeg, and 0.5 teaspoon of pepper to the potatoes.

5

Set the Varoma on top of the Thermomix bowl and place the Mettwurst in the Varoma container.

6

Cover and start cooking to steam the Mettwurst while the potatoes cook below.

7

After some time, check the potatoes and Mettwurst; the potatoes should be almost done.

8

Add the chopped Wirsing to the potatoes in the Thermomix bowl and mix well with a spatula.

9

Decide whether to leave the Wirsing raw or cook it a bit longer; if cooking longer, set for 3 more minutes with the Varoma on top.

10

Once done, serve the dish.
