Welcome to my channel, today we're making chicken pasta with vodka sauce.

First, gather your ingredients: 2 cups marinara sauce, 2 cans of tomato paste, 1 diced onion, diced pancetta, chicken, 1/2 cup vodka, crushed red pepper, heavy cream, olive oil, Parmesan cheese, basil, butter, and penne pasta.

Make sure your water is boiling for the pasta.

Heat olive oil in a pan over low medium heat.

Render down the pancetta with the diced onion until golden brown.

Add chicken and crushed red pepper, cooking until the chicken is almost done.

Remove the pan from heat, pour in 1/2 cup vodka, and flambé until the flames go out, about 1-2 minutes.

Add the marinara sauce and tomato paste to the pan.

At this point, add the penne pasta to the boiling water.

After about 5 minutes, stir in the heavy cream into the sauce and mix well for 2-3 minutes, ensuring it's fully incorporated.

Taste the sauce and add salt and Parmesan cheese as needed, stirring to combine.

Reserve some pasta water before draining the pasta.
