4 lbs chicken quarters
4 green onions
4 cloves garlic
2 shallots
2 inches ginger
2 cups jasmine rice
6 cups water
1/4 cup chicken fat
4 cups chicken broth

Trim off all excess fat from the chicken quarters and set it aside for the rice.

Season the chicken quarters and place them in the bottom of the crockpot.

Add green onion and garlic to the crockpot.

Add 3 cups of water to the crockpot.

Put the lid on the crockpot and set it to high heat.

While waiting for the chicken to cook, mince one shallot.

Rinse the rice and place it in a rice cooker.

Pour the rendered chicken fat over the rice and fill the rest with 3.5 cups of water.

Add 1 cup of the chicken broth to the rice cooker.

After about 5.5 hours, check the chicken; it should be tender and easy to remove from the bones.
