In a medium-sized bowl, combine 1 cup of flour, graham cracker crumbs, and baking powder; stir together.
In a separate bowl, combine 1 stick of softened butter with 1/2 cup of brown sugar; blend with an electric mixer until smooth and creamy.
Add in 1 egg white and mix until incorporated.
Add the dry ingredients into the wet ingredients and mix until a dough forms; stop mixing to avoid over-mixing.
For the filling, combine 3 oz of cream cheese, 1/4 cup of sugar, 1 egg yolk, 1/2 teaspoon of vanilla extract, and 2 teaspoons of lemon zest; blend until smooth.
Scoop about two tablespoons of dough onto a baking sheet lined with parchment paper.
Press your thumbs and fingers into the center of each cookie to create an indent.
Spoon the cream cheese filling into each cookie, being careful not to overfill as it expands in the oven.
Bake the cookies at 350°F for approximately 13 minutes.
Let the cookies cool down before enjoying.
