Cut chicken fillet into thin slices.
Pour coconut milk into a medium saucepan and place on high heat.
Bring to a boil and add mushrooms, lemongrass, onion, chili pepper, lime zest, and ginger.
Cook for about 2-3 minutes, lightly stirring, until the appearance of flavor.
Pour in fish sauce and lime juice.
Bring to a boil, add chicken fillet and sugar.
Cook for about 10 minutes on high heat.
Serve Tom Kha Gai in soup plates and decorate with fresh coriander leaves.
