red wine vinegar

🥗Healthier: apple cider vinegar

💰Cheaper: white vinegar

Apple cider vinegar adds a similar acidity with fewer calories.

olive oil

🥗Healthier: avocado oil

💰Cheaper: canola oil

Avocado oil is healthier but canola oil is more budget-friendly.

1

Wash the flat Italian parsley and cilantro.

2

Remove the stems from the parsley and pack it into the blender.

3

Add the cilantro to the blender, using a two-to-one ratio of parsley to cilantro.

4

Add a couple of cloves of garlic to the blender.

5

Add a little crushed red pepper for spice, but not too much.

6

Add some oregano, removing the heavier stems and ripping off the leaves.

7

Add lemon zest and lime zest to the blender.

8

Squeeze the juice from a couple of limes and a couple of lemons into the blender, catching the seeds with your hand as a sieve.

9

Add a little salt and pepper to the mixture in the blender.

10

Pour in a little blended oil (canola and olive oil blend) to help carry the mixture.

11

Blend the ingredients until they reach a nice consistency, stopping to stir if necessary.

12

Check the consistency and adjust if needed, ensuring it's a beautiful bright green color.

13

Transfer the chimichurri to a mason jar for storage in the fridge.
