Ground oats are lower in fat, while sunflower seed flour is often less expensive.

Coconut oil is plant-based and lower in saturated fat, while margarine can be more budget-friendly.
Separate egg whites and let them sit at room temperature.
Add egg whites to the mixer and turn it on to high.
Once foamy, add a little cream of tartar to stabilize the egg whites.
Gradually add 1/4 cup superfine granulated sugar while mixing on high for about 2 minutes until stiff and shiny peaks form.
If desired, add liquid flavoring or color at this stage.
Add half of the almond flour to the egg whites and gently fold until just incorporated, being careful not to overmix.
Transfer the batter to a piping bag.
Pipe small circles onto a baking sheet lined with parchment paper, leaving about an inch between each.
Let the piped macarons sit at room temperature for 30-40 minutes until a skin forms on top.
Preheat the oven and bake the macarons for about 10 minutes, keeping a close eye on them to avoid color change.
Let the macarons cool completely before removing them from the parchment paper.
Fill the macarons with your choice of filling, such as strawberry jam or pistachio buttercream.
