Preheat the oven to 300°F (150°C).
Line baking sheets with parchment paper.
In a bowl, sift together almond flour and powdered sugar.
Whip egg whites until soft peaks form, then gradually add granulated sugar until stiff peaks form.
Fold the dry ingredients into the egg whites gently until combined.
Add food coloring if desired and mix until the batter flows like lava.
Pipe small circles onto the prepared baking sheets.
Let the piped batter sit for 30 minutes to form a skin.
Bake for 15-20 minutes until the shells are firm.
Let cool completely before filling with buttercream or ganache.
Sandwich two shells together to form a macaron.
