Black Beans

2 cups dried black beans
filtered water
3 small cloves garlic
1 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon salt
1 1/4 teaspoon black pepper

Get a large container and pour in 2 cups of dried black beans.

Soak the beans in filtered water in the fridge for about 24 hours, ensuring there is about an inch of water covering the beans.

Seal the container with plastic wrap and refrigerate for 24 hours.

After 24 hours, rinse the soaked beans gently and place them into a cooking pot.

Add enough water to the pot to barely cover the beans.

Add 3 small cloves of garlic to the pot.

Turn the heat to medium-high until the beans come to a boil.

Once boiling, stir the beans, reduce the heat to low, and cover the pot with a lid.

Check on the beans every 30 minutes, stirring and adding more water if necessary to keep them covered.

After one hour of cooking, add 1 teaspoon of smoked paprika, 1 teaspoon of chili powder, 1 teaspoon of cumin, 1/4 teaspoon of salt, and 1 1/4 teaspoon of black pepper to the beans.

Stir in the spices, cover the pot again, and let the beans cook for another 30 minutes.

After 30 minutes, turn off the heat and serve the beans with your choice of side.
