2 cups black beans (dried)
6 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 tsp cumin
1 tsp salt
1/2 tsp black pepper
1 bay leaf
1 tbsp olive oil
1/4 cup fresh cilantro, chopped (for garnish)

Place black beans in a bowl and fill with cold water.

Remove any floating beans and debris by running hands through the beans.

Drain the water and rinse the beans with clean cold water again, then drain.

Put the rinsed beans in a pot and add about an inch of water over the beans.

Cook the beans on the stove over medium low heat, placing a lid on the pot.

Check on the beans after about an hour.

After about 2 hours, check the beans; they should be cooking well but not done yet.

Maintain enough water to barely cover the beans while cooking.

Cook until the beans are tender, which took about 4 and a half to 5 hours total.

To test if the beans are done, pull out a bean, let it cool, and check for tenderness.
