Black Beans

2 cups black beans (dried)
6 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 tsp cumin
1 tsp salt
1/2 tsp black pepper
1 bay leaf
1 tbsp olive oil
1/4 cup fresh cilantro, chopped (for garnish)

Rinse the black beans under cold water and remove any debris.

In a large pot, combine the rinsed beans and water. Bring to a boil over high heat.

Once boiling, reduce the heat to low and add the chopped onion, minced garlic, cumin, salt, black pepper, and bay leaf.

Cover the pot and let the beans simmer for about 1.5 to 2 hours, or until they are tender. Stir occasionally and add more water if necessary to keep the beans submerged.

Once the beans are cooked, remove the bay leaf and stir in the olive oil.

Taste and adjust seasoning if needed.
