Black Beans

1 1/3 cups black beans
6 cups water
1/2 onion, chopped
3 cloves garlic, minced
1 bell pepper, chopped
2 tablespoons oil
2 tablespoons dry wine
1/2 tablespoon vinegar
1/2 teaspoon white sugar
cumin to taste
oregano to taste
basil to taste
white pepper to taste
salt to taste
parsley for garnish

Select and prepare ingredients: garlic, onion, bell pepper, basil, oil, dry wine, cumin, salt, vinegar, oregano, white pepper, and white sugar.

Measure 1 1/3 cups of black beans and place them in a pot with 6 cups of water.

Cook the black beans in an electric pressure cooker or on the stove until soft.

Once the beans are soft, transfer them to a pot and bring to a boil.

Add cumin, oregano, basil, white pepper, and salt to the pot with the beans.

Add the chopped onion and minced garlic to the pot.

Add the chopped bell pepper, keeping it in larger pieces for texture.

Add 2 tablespoons of oil, 2 tablespoons of dry wine, and 1/2 tablespoon of vinegar to the pot.

Add 1/2 teaspoon of white sugar to balance the flavors.

Use a spoon with holes to compress the beans slightly to help thicken the potage.

Taste and adjust seasoning with more salt if needed, considering the sugar to neutralize bitterness.

Once cooked, remove from heat and add chopped parsley for garnish.

Let the potage rest in the pot to allow the flavors to meld before serving.
