Add almond flour to a food processor.
Add 3 large egg whites, salt, cream of tartar, and baking soda to the food processor.
Close the lid and pulse a few times to combine.
Add 2 tablespoons of very cold, unsalted butter and pulse a few times, leaving some chunks of butter in the mix.
Line a baking sheet with parchment paper or use a well-greased muffin pan.
Divide the mixture equally into four biscuits and place them in the middle of a preheated 400°F oven for 10 to 12 minutes, or until golden brown.
In a skillet on medium-high heat, add 8 ounces of breakfast sausage and break it up into small pieces as it cooks.
Once the sausage is cooked through, add 1 tablespoon of unsalted butter and let it melt.
Stir in 2 cups of heavy cream and 1 cup of water.
Add a little salt, garlic powder, and a generous amount of ground black pepper, mixing to combine.
Add a little xanthan gum and bring the mixture to a small boil.
Reduce the heat to medium and continue to cook and stir for about 10 to 15 minutes, or until it reaches the desired consistency.
Remove the biscuits from the oven, ensuring they are golden brown on the tops and bottoms.
Place a biscuit open-faced on a plate and generously top with the sausage gravy.
