Start with 1 cup of hot water.
Add 1.5 tablespoons of olive oil, 1 teaspoon of sugar, 1.5 teaspoons of sea salt, 1.5 tablespoons of dry milk, 2.67 cups of bread flour, and 0.33 cup of whole wheat flour.
Add 2 teaspoons of active yeast.
Use a mixer with a hook attachment to mix for 8 minutes.
Flour a board and shape the dough, then cover it with a glass bowl.
Let it rest for 40 minutes for the first rise.
Punch down the dough and shape it into a dome or ball, then cover it for the second rise for 35 minutes.
After 35 minutes, punch it down again and reshape it into a dome or ball, cover it, and let it rise for another 40 minutes.
Preheat the oven to 475°F (246°C) with a cast iron dutch oven inside.
After 40 minutes, sprinkle the dough with flour and score it four times on one side and mimic it on the other side.
Carefully place the dough into the hot dutch oven, cover it, and bake for 20 minutes.
Remove the cover and broil for 1-1.5 minutes to brown the crust.
