1 teaspoon vegetable oil
1 small onion, julienned
5 cloves garlic
0.5 teaspoon oregano
1 tablespoon salt
1 cup tomato sauce
2 cups black beans, drained
2.5 cups water (or bean cooking water)
0.25 ajic cuvanel
3 sprigs cilantro ancho
5 sprigs cilantro verde
0.5 stalk celery, halved
2 cups long-grain white rice

coconut milk

🥗Healthier: almond milk

💰Cheaper: water + coconut extract

Almond milk reduces calories while adding a subtle nutty flavor.

black beans

🥗Healthier: kidney beans

💰Cheaper: pinto beans

Pinto beans are often less expensive and can be used in a similar way.

1

Add 1 teaspoon of vegetable oil to the pan.

2

Add 1 small onion, julienned, and cook until dark and caramelized.

3

Add 5 cloves of garlic, 0.5 teaspoon oregano, and 1 tablespoon salt, and mix well.

4

Stir in 1 cup of tomato sauce and mix again.

5

Add 2 cups of drained black beans and cook for 2 minutes to absorb the flavors.

6

Pour in 2.5 cups of water (or the water from cooking the beans).

7

If the bean water is not enough, complete with warm water.

8

Add 0.25 ajic cuvanel, 3 sprigs of cilantro ancho, 5 sprigs of cilantro verde, and 0.5 stalk of celery, halved, and stir well.

9

Cover the pot and bring to a boil.

10

Once boiling, add 2 cups of washed long-grain white rice.

11

Stir the rice from back to front and check for salt before the water evaporates completely.

12

Move the vegetables to one side and stir occasionally to prevent sticking.

13

After about 12 minutes, when the water is almost gone, create a hole in the center and add 0.5 teaspoon of oil.

14

Cover the hole with a damp paper towel to trap steam and cook on low heat for 15-20 minutes.

15

After 20 minutes, check if the rice is cooked and remove the vegetables if desired.

16

Fluff the rice and serve.
