Slice the apples in half and scoop out the seeds.
Slice the apples into thin pieces and add lemon juice, tossing to coat.
Add 1 tablespoon of cinnamon, nutmeg, a pinch of cloves, 1/2 cup of brown sugar, and 1/2 cup of white granulated sugar to the apples.
Add allspice, cardamom, and salt to the apple mixture.
Let the apple mixture sit for about an hour to release juices and thicken with 2 tablespoons of cornstarch.
Make the pie crust using 1 stick of cold butter and 1 1/4 cups of flour, mixing slowly.
Add 1/2 teaspoon of sugar and 1/2 teaspoon of salt to the flour mixture.
Slowly add ice cold water until the mixture clumps together and is smooth.
Form the dough and refrigerate before rolling it out.
Fit the rolled-out dough into a pie plate, using it as a guide.
Sprinkle 2 tablespoons of cornstarch into the apple mixture before adding it to the pie crust.
Pour the apple mixture into the pie crust and drizzle the liquid from the filling over it.
Cut the top pie crust into 5 strips using a pizza cutter for a lattice design.
Trim any long edges of the pie crust as needed.
Brush the lattice with egg whites and sprinkle sugar on top.
Bake the pie in the oven at 375°F for about 1 hour until the crust is golden brown and the filling is bubbly.
