Peel the apples using a potato peeler.
Cut the apples into fourths and place them in a bowl of lemon water to prevent browning.
Chop the apples into desired size using a chopper, ensuring they are not too small to avoid mushiness.
In a bowl, mix 1 cup of granulated sugar, 2 tablespoons of flour, and 2 teaspoons of ground cinnamon.
Add the chopped apples to the bowl and mix to coat them with the sugar and cinnamon mixture.
Pre-bake the pie crust in the oven for about 5 minutes to slightly cook it.
Add the apple mixture to the pre-baked pie crust, spreading it out evenly.
Sprinkle a little extra cinnamon on top of the apple mixture.
Dot the top of the apples with 2 tablespoons of butter, dabbing it on top.
Prepare an egg wash by whisking together 1 egg and a little water.
Seal the pie crust edges by tucking them under and using a fork to crimp the edges.
Make slits in the top crust to allow steam to escape during baking.
Place the pie in a preheated 350°F oven and bake for 1 hour.
