Today, variations exist across the region, with some adding different vegetables or spices, showcasing the adaptability of this beloved stew.

Soak lentils overnight in water.
Drain and rinse the soaked lentils.
Boil lentils in a pressure cooker for 5 minutes after it starts producing steam.
Heat cooking oil in a large pot and fry onions until light golden.
Add minced garlic and stir frequently to prevent burning.
Stir in grated tomatoes and add tomato paste; mix well and simmer for 2 minutes.
Add salt, paprika, and curry powder; simmer for 2 minutes.
Add chopped carrots and a little water; bring to a boil and cook for 5 minutes.
Add cooked lentils and enough water to cover the mixture; stir well.
Cover and simmer for 15-20 minutes until everything is well combined and thickened.
Add chopped green pepper and cilantro; stir in before serving.
