Chop the apples and celery into bite-sized pieces.

Halve the grapes and chop the persimmon if using.

In a large bowl, combine the apples, celery, grapes, and walnuts.

In a separate bowl, mix thick yogurt, mayonnaise, honey, lemon juice, black pepper, and salt to taste.

Pour the dressing over the salad mixture and toss gently to coat.

Serve chilled or at room temperature.
