Prepare the filling by mixing boiled shredded chicken, chopped boiled egg, capsicum, onion, mozzarella cheese, black pepper, salt, Chinese salt (if using), and mayonnaise in a bowl.
Take a slice of bread and cut off the edges.
Place a spoonful of the filling on one half of the bread slice.
Fold the bread over to create a half-moon shape and seal the edges.
Beat an egg and use it to coat the outside of the half moons.
Dip the coated half moons in bread crumbs to cover them completely.
Heat oil in a pan and fry the half moons until golden brown on both sides.
