Cut up the seasoning ingredients: 1 onion, 1 tomato, 3 sprigs of thyme, 2 cloves of garlic, and 1/3 each of red, yellow, and green bell peppers.

Soak the salted codfish in water twice to reduce saltiness, then drain it.

Boil the soaked codfish until tender, about 15-20 minutes, then drain and flake it into pieces.

Heat 8 tablespoons of sunflower oil in a wok or frying pan over medium heat for about a minute.

Add all the chopped seasoning ingredients to the pan and cook them with the codfish, adding about half a teaspoon of black pepper.

Cook the seasonings with the codfish for about 3 minutes, stirring gently to avoid mashing the ackee.

Add the ackee gently to the pan, mixing carefully to avoid scrambling it, and let it simmer for 2-3 minutes.

Optionally, add 50 ml of water to create a bit of gravy and cover the pan to let it simmer for a bit longer.

Serve the ackee and saltfish with fried plantain, Irish potato, or any preferred side.
